Makes about 4 quarts

Rinse white rice till water runs clear. Soak for at least 1 hour (rinse again) before adding to meatball mixture!


Cheesecloth Herb Packet: Oregano Fresh Marjoram Fresh Garlic Cloves Lemon


Meatballs (with sausage): 2 lbs. 80/20 ground beef 8 oz pork sausage 2 eggs ½ cup white rice ½ cup fresh mint (finely chopped) ½ cup fresh parsley (finely chopped) 1 tbsp minced garlic 1 tbsp dried oregano 2 ½ tsp onion powder 1 tsp ground black pepper

Meatballs (with chorizo): (no mint) 2 lbs. 80/20 ground beef 8 oz chorizo (regular – not hot) 2 eggs ½ cup white rice ½ cup fresh parsley (finely chopped) 1 tbsp minced garlic 1 tbsp dried oregano 2 ½ tsp onion powder 1 tsp ground black pepper


To make meatballs: Mix all ingredients but do not overmix. Roll 1” scoop of mixture into balls and place on a parchment lined tray. Into refrigerator for at least 30 minutes. When ready to brown, heat avocado oil in cast iron skillet and brown 2 sides. Remove to paper towel lined tray. (If making ahead, allow to cool then freezer).


To blender: 14 Roma Tomatoes ½ yellow onion 4 cloves garlic 1 tbsp oregano ½ tsp cumin 1 tsp marjoram 2 tsp fresh cilantro 2 tsp Knorr’s chicken bouillon powder (can add more later if needed) 2 c water 1/8 tsp red chili powder.


Lightly Saute: 2 c carrots (diced) 1 c celery (diced) ½ onion white/yellow (diced) 4 Yukon gold potatoes (diced) Do not sauté, but 2c diced zucchini.




To Dutch Oven: Heat about 2 tbsp of Avocado Oil. Add blender contents, herb packet, and bring to a boil. Add low sodium chicken broth and 1 c low sodium beef broth. Stir in 1 tsp tomato paste, 1/8 tsp red chili powder and 1 can Rotel diced tomato/green chili mild. Bring to boil again, then lower to light boil.

Add sauté mixture and low boil for 15 minutes. Add zucchini for 3 minutes. Add meatballs and bring back to boil for 15 minutes.

Taste to see if need to add more chicken bouillon, garlic, chili pepper, and/or cilantro.
